High Protein Banana PuddingPrep

Introduction
This high-protein banana pudding is mine and Justin’s favorite low-sugar and high protein sweet treat—rich, creamy, and perfect for busy days or lazy afternoons. I love making it with my toddler—we both end up with a little mess and a lot of smiles.
Ingredients
3–4 ripe bananas
2 scoops vanilla protein powder ( We use Just Ingredients brand vanilla bean flavored protein powder)
1 pint organic whipping cream
1 box Simply Desserts Sugar-Free Vanilla Pudding Mix (Whole Foods)
2 cups milk (for the pudding mix)
½ box 365 Brand Vanilla Wafers
Instructions
1. Make the vanilla pudding:
Combine 2 cups of milk and the sugar-free vanilla pudding mix in a mixer.
Whip for 3–4 minutes until smooth.
Transfer the whipped pudding to a separate bowl.
2. Whip the cream:
In the same mixer bowl, pour the heavy whipping cream and whip until stiff peaks form. Set aside.
3. Prep the bananas:
Peel and chop 3–4 ripe bananas into bite-sized pieces.
4. Assemble the pudding:
In a serving dish, layer as follows:
Vanilla wafers on the bottom
Vanilla pudding
Whipped cream
Chopped bananas
Repeat layers until ingredients are used, finishing with whipped cream on top.
5. Garnish and serve:
Crumble a few vanilla wafers over the top for extra crunch.
Chill for at least 30 minutes before serving for best results.
