🫐Blueberry Poppyseed Dressing (Easy Homemade Vinaigrette)
A fresh, homemade blueberry poppyseed dressing made with real ingredients in minutes. This sweet and tangy vinaigrette blends blueberries, honey, Dijon mustard, and olive oil for a smooth, flavorful finish—perfect for salads, grilled chicken, and summer meals.
Ingredients
½ cup blueberries (fresh or frozen)
1 tablespoon water
1–2 tablespoons red wine vinegar
1 tablespoon honey (adjust to taste)
1 teaspoon Dijon mustard
3–4 tablespoons olive oil
1 tablespoon poppy seeds
Pinch of salt
Instructions
Add blueberries and water to a microwave-safe bowl. Heat for 1 to 1½ minutes, until softened.
Transfer blueberries to a food processor or blender.
Add red wine vinegar, honey, Dijon mustard, and a pinch of salt. Blend until smooth.
With the blender running, slowly drizzle in olive oil until fully emulsified.
Stir in poppy seeds.
Taste and adjust sweetness or acidity as desired.
Notes
For a thinner dressing, add 1–2 tablespoons of water.
For a creamier version, blend in 1 tablespoon of Greek yogurt.
Store in an airtight container in the refrigerator for up to 5 days.
